Ingredients:
Crackers:
5 tablespoon of spelled flour
5 tablespoons of oat flour
5 tablespoons of whole cane sugar
1 teaspoon powdered yeast tea
1 teaspoon of bicarbonate of soda
2 tablespoons of peanut butter
1 teaspoon of vanilla essence
1 egg
4 tablespoons of vegetable drink
1 pinch of salt
Cream:
200g of cashews
250g of mascarpone
3 tablespoons of whole cane sugar
3 eggs
1 pinch of salt
1 teaspoon of vanilla essence
2 sheets of gelatin
2 cups of coffee
1 coffee cup of port wine
2 tablespoons of cocoa powder
Process:
In a bowl, place the flours, sugar, pinch of salt, baking powder, and bicarbonate of soda, and involve.
Make a well in the center of the mixture and add the peanut butter, vanilla essence, egg, and vegetable drink. Fold everything together until you get a consistent and uniform dough. Take small pieces of the dough and shape a rectangular shape (like "Palitos de la Reine"). Arrange them on a tray and bake in a preheated oven at 200ºC for 12 minutes.
Boil the cashews and soak the gelatine leaves in water.
In a food processor, place the cooked cashews, mascarpone, and sugar. Separate the yolks from the whites and add the yolks to the food processor. Grind until obtaining a creamy and homogeneous consistency.
To the egg whites, add 1 pinch of salt and beat them until stiff. Add 1 c. vanilla essence tea and the previous cream. Fold in slowly and set aside.
In a bowl, mix the two cups of coffee with the port wine. Reserve.
Melt the gelatine leaves and fold them into the cashew cream.
Soak each cookie in the coffee mixture and place (about 7 cookies) on the base of the chosen shape. Add half of the cashew cream over the crackers. Repeat the process and place in the fridge for at least 5 hours.
