We share with you the Vegetarian Pad Thai recipe, specially developed by Clavel's Kitchen. To make this recipe, you will need:
For the Pad Thai:
- 3 tablespoons of oil
- 2 garlic cloves
- 1 red pepper
- 1 carrot
- 1 leek
- ¼ of red cabbage
- Salt and pepper q.s.
- 4 eggs
- 1 pack of noodles (250g)
- 600ml of water
- 4 tablespoons of soy
- 1 tablespoon of rice vinegar
- 6 feet of fresh coriander
- 4 tablespoons of peanut soup
- Sesame seeds to taste
For the sauce:
- 50g of peanut butter
- 30g of honey
- Juice of 2 limes
- 1 chopped garlic clove
Heat a wok with the oil and the chopped garlic and sauté the vegetables cut into thin longitudinal slices over high heat (do no let it cook for too long). Season with salt and pepper and add the previously beaten eggs. Wrap everything out. Add the noodles well into the vegetables, drizzle with soy sauce and rice vinegar, sprinkle with coarsely chopped coriander, and mix.
For the sauce, mix all the ingredients in a small bowl. Serve the pad thai with peanut sauce, sprinkled with peanuts and sesame seeds, and garnish with slices of chili peppers and lime wedges.
