Aveleda Alvarinho and vegetarian spring board

Spring has a special flavour with this Vegetarian Spring Board, specially prepared by Greens & Nuts. A recipe that pairs perfectly with Aveleda Alvarinho. Discover the full recipe here:

Ingredients:

  • 2 Portobello mushrooms;
  • 100g goat cheese;
  • 1 handful of cherry tomatoes;
  • Olive oil and salt to taste;
  • Spices to taste: black pepper, cumin, garlic powder, smoked paprika, oregano;
  • To accompany: ripened cheese, cherry tomatoes, toasted bread slices, and fresh parsley.
 
Preparation:

  1. On a tray, place the mushrooms and season them with the spices, olive oil and salt; 
  2. Add the goat's cheese, the cherry tomatoes and the fresh oregano;
  3. Bake the mixture in a preheated oven at 200ºC for about 10 minutes or until golden brown;
  4. Serve the mushrooms on a board with slices of toasted bread, cured cheese, cherry tomatoes and fresh parsley; 
  5. Finish with a drizzle of olive oil;
  6. Enjoy with Aveleda Alvarinho
